Salmon Lox Canapes
1 small multi-grain baguette sliced thinly
1/4 cup of organic mayonaisse
1/4 cup gorgonzola cheese
1 tbsp Carlina’s Cucina lemon infused organic olive oil
1 lb of salmon lox
capers
Cut the baguette in 1/4 inch slices. Mix the mayonaise, gorgonzola and lemon infused olive oil in a food processor or blender until smooth. Spread the gorgonzola/mayo mixture liberally in the middle of each piece of salmon lox and roll the salmon into a cone. Garnish with capers and organic herbs.
A great party appie. Serves 8.
