Simple and Spicy Kamut Pasta Simple & Spicy Kamut Pasta
2 cups Artisan Acres Kamut rotini
1/8 cup Carlina's Cucina organic extra virgin olive oil
1-2 tbsp Carlina's Cucina organic chili infused olive oil
4 fresh or canned organic tomatoes chopped
3 cloves garlic
1/8 cup crotonese cheese grated
parsley for garnish
salt and pepper to taste

Directions
Boil water. Add 2 tbsp salt to the boiling water and add the Kamut Pasta. Cook as you would regular wheat pasta until cooked but firm (eldente). Chop tomatoes and garlic.

Once pasta is cooked, drain the water and put pasta back in the pot. Add both the regular and chili olive oils as well as the the chopped tomatoes and garlic.

Grate and add half of the cheese. Season to tatse. Toss and plate the pasta. Add the remainder of the cheese over each plate of pasta. Garnish with fresh organic parsely and serve. Serves 2-3 people. Cin cin!

Cheese Tip Cheese Tip
Try Italian crotonese which is made with sheep's milk of Southern Italy. It has a hard, dry, yellow to orange exterior and pale to creamy-yellow interior, which is more pungent than parmesan or romano cheeses. Always try and grate your own cheese...the flavour is superior. Most likely you will need to venture to your nearest Italian store for this one but your taste buds will thank you!
